Licensed brasserie has chefs with Michelin star pedigree in the kitchen
Catering company Chez Charles has added a new string to its bow – a French restaurant in d3.
The licensed brasserie is headed up by group executive chef Jeremy Degras, formerly of Michelin-starred restaurant Le Quartier Gourmand.
The kitchen uses fresh, seasonal products and has a menu rooted in classic French cooking, but taking influence from the team’s time working around the globe.
Previously Chez Charles was known as a high-end catering company. The new venue is the brand’s first foray into the restaurant business.
Degras says: “Because we have been defined by our cuisine since the inception of the brand, we wanted to create a restaurant environment which embodies our desire to produce gastronomical dishes rooted in traditional French cuisine using modern cooking techniques.
“The dishes are conceptualised by the produce and the ingredients – this is where the core of Chez Charles lies.”
The restaurant itself has a glass-fronted open kitchen, so diners can see what the chefs are getting up to. There is also a striking, custom-built chandelier hanging in the centre of the room.
